Use a good quality fruit juice.
You want to make sure that the fruit juice you are using is of high quality. The juice can be fresh or bottled, and add fresh squeezed lemon and lime if desired.
Use ripe, plump fruit.
Your fruits should not be bruised or damaged in any way. They should be firm and very fresh. Overripe fruits tend to turn mushy when cooked for a long time, so they won't be as effective at infusing their flavours.

Whole cloves, cinnamon sticks or vanilla pods are often great for Potpourri as they infuse the mixture with all of their natural oils and flavours during cooking. But feel free to experiment by adding most types of fruit peels, dried flowers including rose petals or lavender blossoms, or seeds such as star anise.
Store in a cool, dry place
Store your Potpourri in a cool, dry place such as your pantry or countertop to keep it fresh for longer. And make sure that you label and date the jar, so you know when exactly each batch was made.
